・Step1

First, cut and lay out a cookie sheet in a round pan. Heat butter and milk in a heatproof container at 600w for 40 seconds. Preheat the oven to 160°C. Put water in a pan and warm it up to about 60°C (140°F).

・Step2

Beat the eggs in a bowl with a hand mixer, then add all the granulated sugar. Mix at high speed until the bowl is dipped in the water in the pan and the dough is lifted and falls off, leaving a trail.

・Step3

Add the flour all at once and mix. When the flour is gone, add the warmed milk and butter. Pour the dough into the mold and add the dough from the bowl. After removing the air, place the dough on a baking sheet.

・Step4

Bake in the oven at 160℃ for 30-35 minutes. If the dough is not browned, bake for 5 minutes at a time. Remove the cake from the mold and cool in a cooler until hot.

・Step5

Make the syrup. Combine water and granulated sugar in a small saucepan and bring to a boil.

・Step6

When the sponge dough has cooled completely, remove the paper mold and cut it into thirds; put about 2 scoops of cream on top and spread with a knife.

・Step8

Place the strawberries on top. Spread with another 2 scoops of cream. At this point, use a knife to brush any cream that protrudes over the sides.

・Step9

Turn the middle of the cut sponge dough over and brush with syrup. Lay the sponge cake on top of the syrup coated side down. Spread the syrup evenly. Spread with 2 scoops of cream.

・Step10

Again, put about 3 scoops (or 4 scoops if there is still a lot of cream left) of cream on top and apply the main coat.

・Step11

Beat the remaining cream with a whisk until it reaches a squeezable consistency. Place in a squeeze bag. Decorate. Place the strawberries for decoration.
