Ingredients:
- Chicken thigh: 1 piece
- All-purpose flour: as needed
- Cornstarch (or potato starch): as needed
- Salt: a pinch
For the Marinade (A):
- Soy sauce: 1.5 tablespoons
- Sake: 1.5 tablespoons
- Sugar: 1 teaspoon
- Minced garlic: 1 teaspoon
- Grated ginger: 1 teaspoons
- Salt: a pinch
Instructions:
Step 1: Preparing and Marinating Chicken
Clean the chicken thigh and cut it into large bite-sized pieces. Massage the marinade (A) into the chicken and let it sit for at least 30 minutes.
Step 2: Mixing with Flour
After marinating, discard any excess liquid. Add the all-purpose flour to the chicken and mix until the mixture becomes sticky.
Step 3: Coating and Initial Frying
Coat the chicken pieces in cornstarch. Deep-fry in 170°C (340°F) oil for 3 minutes.
Step 4: Rest and Refry
Remove the chicken and let it rest for another 3 minutes, then fry for an additional 2 minutes while ensuring the chicken is not submerged completely in the oil.
Step 5: Serve with Lemon
Place the crispy karaage on a plate and serve with a slice of lemon on the side.
