Japanese-Style Okra Salad with Mayonnaise 

Okra is a vegetable that is called "okra" in English and pronounced the same way in Japan. It's in season during the summer, and its distinctive sticky texture and nutritional value are appealing. Popular Japanese dishes featuring okra include fresh okra drizzled with soy sauce or ponzu, okra simmered in dashi broth, okra added to natto, and okra enjoyed as tempura, ohitashi (boiled greens), or pickles. Okra also offers health benefits, such as lowering cholesterol and blood sugar levels and preventing constipation.
Okra is in season during the summer and is rich in nutrients. 

 

This time, we introduce a refreshing okra salad that is delicious when chilled and dressed with a sauce made from ponzu, a citrus-scented sauce that is very popular in Japan, and mayonnaise.

[Ingredients] Serves 2-3

1. Okra 10 stalks
2. Mayonnaise 1 tablespoon
3. Ponzu 1 tablespoon
4. Ground sesame seeds to taste
5, Black pepper to taste

 

*Ponzu is a Japanese seasoning, “soy sauce with citrus juice.”

*If ponzu is unavailable, substitute with soy sauce and lemon juice.

[Step1]

Rinse the okra under water. Place the okra on a cutting board, sprinkle with a little salt (not included in the recipe), and roll the okra around on the board. This improves the okra's texture.

[Step2]

Cut off the stem end. Insert the knife blade into the protruding part where the stem meets the fruit, then peel it off in a circular motion.

Boil the okra for about one minute, then cut it into your preferred size.
