How to make Miso Soup

Miso soup is a traditional Japanese soup made with a base of dashi (a type of broth) and miso paste. You can add almost any ingredients you like, such as tofu, seaweed, vegetables (like spinach, mushrooms, or onions), and even fish or shellfish.

Miso Soup with Tomato and Bacon

[Ingredients] Serves 2

1. 8-10 small tomatoes or 1 regular tomato
2. 2-3 slices of bacon
3. 400 ml water
4. 3g of HONDASHI (flakes of bonito soup broth)
5. 1 tablespoon (18g) miso paste

[Step1]

Boil water in a pot. When the water boils, add the dashi.

 

This recipe is for making dashi stock using "Hondashi," which is very popular in Japan. It comes in flakes and dissolves quickly in hot water, making it easy to make dashi. It is also sold outside of Japan, so you may be able to find it in supermarkets in your city.
In case you want to make dashi by other methods, please prepare 400 ml of dashi stock according to your preference.

Cut the small tomatoes into quarters, and cut the bacon into 1 cm pieces.
*Cut regular tomatoes into 1cm cubes.

[Step3]

When the broth is simmering, add the cut tomatoes and bacon and cook for 2-3 minutes.

 

[Step4]

Once the heat is turned off, dissolve the miso paste. After the miso paste has dissolved, heat again over low heat. Keep the heat low, but do not let it boil, as the flavor of the miso paste will be lost if it comes to a boil.

* If you taste and find the flavor too weak, add more miso paste to adjust the flavor to your liking.

Serve in miso soup bowls with rice and side dishes!

You can combine your favorite ingredients to make miso soup.
For example, you can combine boiled spinach and onions, tofu and scallions, or potatoes, carrots, and onions. Thinly sliced pork can also be added for a richer and tastier dish.
