Prep & Cook Time

[Total Time]

Total 20minutes

[Ingredients (serves 1) ]

Onion: 1/4
Carrot and green pepper: a little (optional)
Chicken: about 40g
Cooked rice: 150g

[seasoning]
(A) Ketchup: 3 tablespoons
(A) Salt and pepper: a pinch
(A) Chicken stock granules: a pinch (optional)

[For omelette]

Eggs: 2
Knob of butter: 10g

Cooking Process

Step1

Heat some oil in a frying pan over medium heat.
Add the chicken and stir-fry until browned.

Then add the chopped onion. If you have carrot and green pepper, add them as well.

Step2

When the vegetables are soft, add the seasoning (A), which includes 3 tablespoons of ketchup, a pinch of salt and pepper, and a pinch of chicken bouillon granules.

Boil off some of the water from the ketchup to prevent the rice from becoming too watery.

Add the cooked rice and mix well. It's best to use warm rice. This completes the chicken rice.

Step3

Heat the butter in a frying pan over medium heat, spreading it evenly.

When the pan is hot enough, quickly pour in the beaten eggs and spread them out.

Stir lightly with chopsticks and cook until the eggs are half cooked.

Step4

Remove from the heat, place the chicken rice in the middle of the omelet, and use the edge of the pan to flip the omelet over, wrapping the chicken rice in the eggs.

If this is difficult, you can simply place the chicken rice on a plate on top of the omelette.
