Ingredients:
・Chicken thigh meat


Seasonings:
・Soy sauce: 40ml (40cc)
・Mirin: 50ml (50cc)
・Sake: 50ml (50cc)
・Sugar: 30g
・Sesame oil: 10ml (10cc)
・Garlic: 5g (grated)
・Ginger: 5g (grated)

 

Step 1: Preparing the Teriyaki Sauce
Place all the seasonings except for the sesame oil into a pot. Bring the mixture to a slight boil, ensuring the alcohol from the sake and mirin evaporates. This will leave you with a rich and aromatic base for your teriyaki sauce.

Step 2: Marinating the Chicken
After the sauce mixture has cooled, transfer it to a container and stir in the sesame oil. Immerse the chicken in this marinade, ensuring it's well-coated, and let it soak for about an hour to infuse those delightful flavors.

Step 3: Grill the Chicken
Remove the chicken from the marinade, ensuring to save the marinade for later. Pat the chicken dry with paper towels to ensure a nice sear, and then fry it on both sides until it's beautifully golden and almost cooked through.

Step 4: Finalizing the Teriyaki Sauce
Once the chicken is nicely browned, pour the reserved marinade into the frying pan. Simmer it until the sauce thickens, caramelizes, and clings to the chicken, giving it that signature teriyaki glaze.

Step 5: Serving
Plate the glistening teriyaki chicken, drizzling any remaining sauce over the top. Pair with steamed rice or your preferred side and enjoy!
