Teriyaki Chicken Pizza

[Ingredients] Serves 2-3

  • Chicken: ½ piece (about 100-150g)
  • ☆Soy Sauce: 2 tablespoons
  • ☆Sake: 1 tablespoon
  • ☆Sugar: 1 teaspoon
  • ☆Mirin (sweet cooking rice wine): 2 teaspoons
  • ☆Grated Ginger: About 5g (approximately 1 teaspoon)

[Ingredients] pizza dough

  • Bread Flour: 300 g (about 2 ½ cups)
  • Salt: 7 g (1 ¼ teaspoons)
  • Water: 170 ml (about ¾ cup)
  • Dry Yeast: 1 g (about ¼ teaspoon)

Toppings

  • Onion: ¼ of a medium onion, thinly sliced
  • Cheese: As desired
  • Corn (optional): A handful
  • Mayonnaise: As desired
  • Seaweed (optional): A small amount, shredded

[Step1]

You can use store-bought pizza dough, but for this recipe, we’ll use a homemade hand-kneaded dough.

To Make the Dough from Scratch:

  • Bread Flour: 300 g (about 2 ½ cups)
  • Salt: 7 g (1 ¼ teaspoons)
  • Water: 170 ml (about ¾ cup)
  • Dry Yeast: 1 g (about ¼ teaspoon)
  1. Knead the ingredients thoroughly until the dough is smooth and elastic.
  2. Let it mature in the refrigerator for 1–2 days for the best flavor.
  3. If you're short on time, allow the dough to rise at room temperature for at least 4 hours.

[Step2]

  1. Cut the chicken into small, bite-sized pieces.
  2. Sear the chicken in a skillet until it develops a nice golden-brown color.
  3. Add the seasonings (ingredients marked with ) to the skillet and simmer gently.
  4. Once the sauce thickens slightly, remove it from the heat and let it cool for a few minutes.

💡 Tip: Be careful not to over-reduce the sauce. Let it thicken just lightly, as over-reduction can make the saltiness too intense.

[Step3]

  • Spread the teriyaki sauce (from the chicken preparation) evenly over the pizza dough.
  • Top with onions, chicken, corn, and cheese.
  • For a crispier base, lightly sear the bottom of the dough in a frying pan before placing it in the oven.
    • Alternatively, you can skip this step and bake the pizza directly in the oven.
  • Bake until the cheese is melted and bubbly, and the edges of the crust are golden brown.

[Step4]

  • Add a drizzle of mayonnaise and sprinkle shredded seaweed on top of the pizza.
  • Bake the pizza in the oven. Keep in mind that oven temperatures and power vary, so adjust accordingly.
    • For reference, this pizza was baked at 250°C (480°F) for 5 minutes.
