Tomato Sauce Pasta with Spear Squid

The texture and umami of spear squid are exceptional. It is delicately enhanced with a refreshing tomato can and basil sauce.

Tomato Sauce Pasta with Spear Squid

<Ingredients for 2 servings>

  • Pasta: 200g
  • Spear squid: 200g
  • Cooking sake: 3 tablespoons
  • Garlic: 1 clove
  • Basil: 6-7 leaves
  • Black olives: 2 pieces
  • Capers: 2 teaspoons
  • Canned tomatoes: 1 can (400g)
  • Granulated consomme: 1 tablespoon
  • Salt and pepper: to taste
  • Olive oil: 2 tablespoons

Step 1 : Prepare the Ingredients

Cut the squid into bite-sized pieces / Mince the garlic / Slice the black olives / Coarsely chop the capers

Step 2 : Cooking Process

Heat olive oil and minced garlic in a pan over medium heat. Once fragrant, add the squid and cooking sake. Stir-fry and then remove from heat temporarily.

In the same pan, add canned tomatoes, consomme, salt, and pepper. Warm the mixture over medium heat. Once warmed, add black olives and capers. Let it simmer.

Step 3 : Cook the Pasta

Boil water in a pot. When it boils, add salt (approximately 5% concentration) and the pasta. Cook until it reaches your desired firmness.

Step 4 : Combine Everything

Transfer the cooked pasta along with a bit of the cooking water to the pan from step 2. Return the cooked squid to the pan as well. Tear the basil leaves by hand and add them to the pan.

Mix everything together, season with salt and pepper to taste.

Step 5 : Serve

Plate the dish and sprinkle more basil on top for garnish. Enjoy your flavorful squid pasta!
